
One interesting, and usually awesome, thing we discovered about Australian cuisine is that they love to put fried eggs on everything.
If you order a burger with the works in addition to the salad, beetroot, and tasty cheese you get a fried egg.
What would top off an Aussie pizza best? Parmesan? Pepper flakes? Oh no, the item of choice is a, you guessed it, fried egg.
Want to make a tasty casserole? Don't cover it with cheese before you bake it. No way! Crack some eggs over top, a dozen will probably do, and you've achieved culinary perfection.
For things like pizza or burger toppings we loved fried eggs. We even topped homemade burgers with them and those burgers turned out to be the best burgers we ever made. However, the idea of replacing my nice gooey, cheese-topped casseroles with eggs is just weird. Plus, they don't really like breaking yolks and I really don't like eating unbroken yolks. Now, if it was just adding eggs, say in an cheese-egg mixture to top a casserole, that would probably rock my world.
