Best cheese ever! Just tried it at a Greek festival in Brisbane. You can fry it and it just crisps up instead of getting all melty. Melted cheese isn't bad, but imagine cooked cheese that still has that distinct squeaky, cheesy quality so awesome in cheese. That's haloumi!
